What is the black liquid draining into the ice-cream canister from the motor while making? And is it still safe to eat?

Of course it isn't safe to eat!!

It is likely a mixture of oil, broken seal dust and a little metal/rust creamed with a drop of condensation.

50 years as as a chef and I wouldn't serve that or eat it. Fix it or thrown the machine away! These machines are normally 20 years old and get used 3 times every 2 years.
